You and I will probably agree that minced meat noodles,a.k.a bak chor mee, is the most beloved noodle dish in Singapore. Every hawker centre has one stall selling, and I believe everyone has their favourite bak chor mee.
Ah Seng's bak chor mee leaves an impression in my mind. They used to operate at Albert Food Centre, with long queues of people for their noodles.
I ate it a few times before and it was so good. But out of sudden, it changed to selling laksa and a new owner, left without traces of where Ah Seng had moved.
A few days ago I was at Hong Lim Market & Food Centre looking at what to eat for lunch. I walked past this familiar name stall and asked in Chinese, "Are you last time from Albert Food Centre?" The hawker nodded his head. I ordered his bak chor mee without hesitation.
He mentioned to me he had moved there during the Covid period, but a lot of people don't know about it. "Lots of people missing your noodles" I responded in jest.
The Bak Chor Mee
This is the 5SGD mee pok (flat noodles) dry version. Dumpling, minced/sliced pork, mushrooms and fried lard/stingray on the bowl of noodles. On the other hand, handmade fishballs and vegetables in the bowl of clear soup.
Mee pok coated with vinegar and chilli after mixing. Chewy, tangy and spicy are over in this noodle.
When the fried flounder joins in the mix, savoury flavour infused into the noodles. It was so good and slurpy. There was a slight alkaline aftertaste at the end.
Handmade dumpling is a pure pork version. Skin is soft and chewy, meat was marinated and taste is light.
Minced and sliced pork are tender and fresh. No blood was found on it.
Ah Seng's soup is the highlight point of the dish. It is clear and lightweight but appropriately balanced between sweetness and savoury flavours. Not a lot of stores can do that.
Handmade fishballs are tender and bouncy.
Thoughts
Ah Seng Teochew Minced Meat Noodles still maintained the high standards of his bak chor mee. There is a bit of an alkaline taste on the noodles but not a big issue.
Soup cleanses the palate of my taste buds when slurping the noodles, which is a good balance.
If you like your bak chor mee with perfectly cooked noodles with full of flavours, this is the one you can't miss out on.
