Fei Ye Ye Food Tradition 肥爷爷: Wallet-friendly and mouth-watering wonton noodles

Eating at Chinatown Complex hawker centre always feels complicated to me, as they have more than 150 stalls, making it hard to choose what to eat from there. And of course, not every store sells good food.


So I was walking around there exploring and there was this stall name which I find amusing, it's called Fei Ye Ye ( meaning fat grandpa in Chinese) which sells wanton noodles and snake queues are formed on it. And with that, I am in the snake queue too.

Their items are pretty standard: Wonton noodles, Dumpling noodles, Chicken feet noodles, Dumpling soup and Wonton soup.



Watching them cooking the noodles seems like they are very seasoned and experienced. This is a very important step for wonton noodles. Rinse the noodles with cold water for a few seconds when cooking and afterwards back to the hot water and cook again. This step was to make the noodles springy and not soggy.

From the price point alone this is absolutely a steal. The portions are good enough to make a person full. It has 3 wontons, vegetables, pork lards and a good amount of char siew (Roasted caramelized bbq pork).

The egg noodles are coated with pork lard, chilli and soya sauce for seasonings which are very old and traditional. The noodles are cooked al-dente and springy. Paired with seasonings it is very fragrant, especially on the pork lard portion. I could taste the soya sauce had added some Chinese herbs inside.



Char Siew

The char siews they use were good. It was the lean meat type with small fats around it, giving a good bite without being too guilty and having a firm texture.


Wonton

The wontons are pretty ok, not the best one I had but they are fresh. The fillings are pork and I can taste ginger bites too.


Thoughts

This is a near-perfect wonton noodle for me. The noodles themselves have a delightful bounce, absorbing the savoury sauce while retaining their toothsome bite. Using pork lard oil for seasoning noodles is rare nowadays due to cost and preparation steps. The missing point would be the wontons, which can improve more.


I did some Google research about this stall and found out that previously they are famous for their soy sauce chicken, which people mention is better than the One Star Michelin soy sauce chicken. However, due to the Malaysia chicken export ban in 2022, they have stopped it. Hopefully, it will come back one day.


During the Chinese New Year, the stall will not sell the noodles as they will be selling yu sheng instead. Will want to try it if have chance.
