Ramen Dining Keisuke Tokyo (Capitol Singapore): Exclusive Jiro-style ramen!

If you are a ramen lover in Singapore, you will probably know Keisuke Ramen, the biggest ramen chain store in Singapore. They stand out from other brands because every outlet from their stores sells different and unique styles of ramen.


Recently, they opened a new outlet at Capitol Singapore. What caught my eye was their exclusive dish: Keisuke Jiro-Style Ramen. So without further ado, I make a trip down for this exclusive ramen.


What is Jiro-Style Ramen?


Jiro-style ramen was founded by Yamada Takumi, who owns multichain ramen shops named "Ramen Jiro". This style of ramen I would say is very aggressive. Over-the-top portions, a pungent pile of raw garlic and soy-sauce-based broth with pork lard swimming around.


This very aggressive style of ramen became one of Japan's food cults, where some of the hardcore regulars called themselves “Jirorians.” It also proclaims the junk food of ramen.

The Ordered Dish:

Although not as overzealous as Jiro ramen, it is still a big bowl of ramen. The brownish thing on top of the ramen is actually marinated pork lard, which is meant to mix with the broth.


From the picture, the vegetables seem to cover on top only. Actually, it covers 80% of the ramen as it is freaking 300g of bean sprouts and cabbage, which is still considered a normal portion.

Jiro-style uses flat noodles for their ramen. I chose my noodles to be hard and they cooked it perfectly. Hard and chewy, designed to hold up well to the robust broth


The broth is a savagely savoury, assertive and unapologetic taste that lingers on the palate. Once I bite the vegetables with the soaked broth, it gives out this garlicky and porky aroma yet keeps the crunchiness of the vegetables. The vegetables are also fused with the broth, making it flavourful.

Keisuke's Char Siew always maintain its standards, thick but not tough, making it easy to bite and delicious. Flavoured Egg are on the point too.


Thoughts



For this ramen I will not give any ratings, it is either you love or hate it. It is the heavyweight division of ramen, every bite of it feels like a heavyweight punch. I like this ramen as I am more of a savoury type of palate.


Even though this broth is very savoury, Jiro-style ramen is meant to be that way, to pair up with massive loads of vegetables and noodles to eat. I don't recommend it to drink the broth naked. Char Siew is nicely done and the pork lard makes the broth more robust and intense.


If you like bean sprouts and cabbages, have a savoury palate and whale stomach, Jiro-Style Ramen will suit you for a meal.
