三代食家 Three Generations Gourment Prawn Noodles: A Powerful Legacy Spanning Three Generations!

Passing down a family recipe to the next generation is no small feat, but maintaining it through three generations is truly remarkable. 三代食家 is a prawn noodle specialist whose recipe was passed down from their grandmother.


Their grandmother also ran a prawn noodle stall at Hougang Ave 7 Block 11 market, which was demolished around the 2000s. Now the grandson has come back with an improved recipe!

三代食家 opened this year in April and is located on the popular Tam Chiak Kopitiam. They have a wide selection of choices from their menu.

A bowl of dried prawn noodles with broth

Prawn & Pig Skin Noodles Dry Version


The whole vibe of this noodle gave me a hearty and rich taste, especially the broth. Pork Slices, prawns, pork lards, bean sprouts, a generous portion of shallots and roasted garlic.


The owner mentioned that their condiments and chilli are handmade by themselves.



Fresh prawns in the bowl

The prawns were fresh and had a great texture, however, it is sliced in half. Noodles are coated with tomato ketchup and chilli. Tastewise, the chilli is a little overpowering and a bit jelat. One good thing is the shallots and garlic are very fragrant.

This pork lard is sooooooo good! Fresh, crunchy and you could tell it they prepared by themselves. It's a highlight point.

Pork slices were cooked well and had no"porky" taste on them.



Fresh and rich prawn broth

Broth was rich and multi-dimensional taste. The first sip was heavy and a bit salty, but towards the end, it had a slightly sweet taste. Need to balance the saltiness part. Black Garlic enhances the soup fragrance.


Thoughts


Based on the condiments alone, you can tell they put their heart and soul into the prawn noodles. You can taste the broth is an enhanced version of their grandma's recipe, just need to improve on the saltiness part. Pork lard is the hidden star here.


The prawns were fresh and the noodles cooked great. If you are a fan of rich and heavy flavours, this would be great for you, especially the dry version. It's a little overpowering for me, but still, it's a great bowl of prawn sensation.
